Cameroon tomato stew/ Rice and stew
Ingredients:
1. Ripe tomatoes, blended
2. Vegetable oil
3. Onions, finely chopped
4. Garlic, minced
5. Ginger, grated
6. Scotch bonnet peppers, minced
7. Tomato paste
8. Rosemary
9. Thyme
10. Stock cubes
11. Salt and pepper to taste
12. Proteins of choice (chicken, fish, or beef)

Instructions:
1. Heat vegetable oil in a pot and sauté chopped onions until golden brown.
2. Add green spices(parsley, spring onion)
3. Incorporate the paste and blended tomatoes, Cook until the tomatoes break down and the mixture thickens.
4. Add chicken stock then Season with all other ingredients, white pepper,rosemary, curry,garlic, ginger ,thyme, stock cubes, salt, and pepper. Adjust quantities based on your taste.
5.Add fried chicken and fish and coat them with the tomato mixture, let it simmer
6. Taste and adjust the seasoning if needed.
8. Once everything is well-cooked, serve the Cameroon tomato stew with rice, plantains, or your preferred accompaniment.
